Small-batch cold-pressed juices, custom smoothies, and wholesome grab-and-go eats made from ingredients you can actually pronounce. No concentrates. No shortcuts. Just produce, pressed.
Local Produce
The Juice Lab started with one frustration — every juice on the shelf had been sitting since last week, pasteurized into submission, stripped of everything that made it worth drinking. We wanted something different: juice that tasted like the produce it came from, pressed in small batches, and poured the same day.
We opened our doors in Waterbury with a cold-press machine, a list of local farms, and a refusal to compromise on what goes into every bottle. Everything we make is small-batch, cold-pressed, and kept cold from press to pour. No heat. No concentrates. No ingredients you'd need a decoder ring for.
Four steps between the ground and your hands. No shortcuts, no shortcuts we can't explain.
We visit local farms weekly and build our order around what's at its peak — not what's cheapest in October.
Every piece of produce is washed, peeled when needed, and prepped by hand. No shortcuts, no machine shortcuts.
Our hydraulic cold press extracts juice at low speed and low heat — preserving enzymes, flavor, and color.
Bottled immediately, kept cold, and served within 72 hours. If it's not fresh, it doesn't leave our kitchen.
Walk-ins welcome. No reservation needed — just show up hungry or thirsty, or both.
